Bean and Vegetable Salad

 

Just made a fresh Bean and Vegetable Salad to take to my kids’ school for Teacher Appreciation Potluck.

Bean and Vegetable Salad

These are the ingedients I used, but you can use whatever beans and vegetables you like. ~ Sam

1 can each of the following Beans (organic or EDTA/BPH Free)

Chickpeas

Cannelli

Red Kidney

Pinto

Fava

1/2 Red Pepper Chopped

1/2 Green Pepper Chopped

2 slices purple onion minced

3 celery stockeds chopped

1/2 bunch parsley chopped

Juice of two Lemons

1 Tablespoon Hemp Oil

1 Tablespoon Olive Oil

Sea Salt and Pepper

Rinse and drain the beans and pour the oils over, mix well and let the beans absorb the healthy oils while you chop the vegetables.  Add the vegetables to the beans.  Sqeeze two lemons and add the juice to the salad, stir.  Add sea salt and pepper to taste.  This salad is best made early in the day and left to chill in fridge for a few hours.
